Kate’s latest recipes…. If you are not keeping up with Lifespark on Facebook then check the ‘what’s new’ for the latest recipes. We will post them here and then add them to the appropriate recipe section.
Beetroot and vegetable fritters
Ingredients
1 med beetroot
1 large carrot
1 med zuchinni
1/2 onion
2 eggs beaten
Extras like coriander or parsely
1Tb lite mayonnaise
1Tb wholegrain mustard
Grate all vegetables and put into a bowl. Finely chop onion (optional) and add. Add mayonnaise and wholegrain mustard and the 2 beaten eggs and mix well together with the coriander/ parsley. Take a large spoon and put heaped mixture into hot pan with a little oil and pan fry each side for about 4 mins.
Makes around 6-8 depending on your size.

Lifespark Supermarket Tours
Join Kate on one of her fabulous supermarket tours to understand what you are really putting in your trolley. We take a closer look at nutrition labels, marketing claims and food additives plus some great meal ideas. The tour is only $15 which includes an info pack and is run from the Mt Wellington Countdown on Mt Wellington Highway. Alternatively get a group of friends together (min 6) and Kate will come to your local supermarket. The next tours will be on Wednesday 22nd February at 5:45pm to approx 7pm.
