Recipe of the week:

Turning oatballs into logs…

Healthy logs!

I love these, really similar to the oat balls on the website but instead of rolling individual balls the same mixture can be used for making logs. All you need to do when you have combined all the ingredients is form it into a ball shape and then using your hands gently roll it backwards and forwards so that the circle starts to look like a cylinder shape. You can make these as long and thick or thin as you would like.

I have two types in the photo: Apricot and cashew and chocolate

Recipe:

½ cup oats or oat meal
½ cup shredded coconut
1/2 cup diced dates
¼ cup sultanas
¼ cup sunflower seeds
3 Tablespoons of honey
1tsp ground ginger (optional)
2Tb cocoa powder
Chocolate coating:
½ cup dark chocolate chips
Shredded coconut

Put into food processor and blend until mixture is sticky and easy to roll into a ball. Gather all the ingredients out of the processor and form into a ball on a chopping board. Then with both hands roll the mixture gently backwards and forwards so that is starts to take on a cylinder shape. Keep going and you will get the cylinder shape longer and narrower. It should start to resemble a log shape. Once you have your log ready, melt the chocolate chips and have your chopped nuts or shredded coconut ready to go. With a teasspoon spread the chocolate lightly over the top of the log hen sprinkl nuts or coconut on top (you need to do this fast as the chocolate dries fast). Place back on a dish and in fridge afterwards to cool chocolate.

The apricot version is the similar with the portions of rolled oats and seeds and coconut etc but didn’t add the cocoa powder and added 3/4 cup chopped sulphur dioxide free apricots and 1/2 cup roast but not salted cashews- this gave it an amazing flavour! I also as you can see in the picture I didn’t add the chocolate coating but you could if you wanted to impress your guests then sprinkle over some more chopped apricots instead of nuts

The tour is only $25 which includes an info pack with a menu planner, recipes, food diary and all notes to reflect on for later down the track.
