Brief Description

I must be obsessed with pancakes or something! But the variations are endless and I just get so excited about what combinations you can put together to have fun and boost your body with goodness! 

These quick antioxidant pancakes are a sure way to get you fired up for the day with a good dose of vitamin C, fibre, protein, iron and B12, they should keep you full for a while. If you want more protein, you can add 2Tb of protein powder to the mix too. Or if you don't have almond meal you can use protein powder instead.

  • In a blender or food processor, blend the eggs, date or Natvia or other natural sweetener and mixed berries together (they can be frozen berries) until smooth. 
  • Then add the baking powder and almond meal and or protein powder and process for 5-10 seconds. Again you can use one or the other, they both come out great. 
  • Heat a non stick pan to low- medium heat, its really important that you don't have the setting too high as the bottom of the pancakes will burn before the inside is cooked. Add tsp of coconut oil or butter to oil the pan then dollop 2 heaped tablespoons of the mixture to the pan and cook for around 2-3 minutes each side. Flip over when you see the top start to bubble. Mixture will make around 8 pancakes. Serves 2
  • Serve with sprinkle of cinnamon and dollop of yoghurt/ coconut yoghurt or even some fresh berry juice.
