Berry Loaf

Brief Description

There is nothing better than baking things and then having the guiltless pleasure of eating it too! This is the perfect loaf to have either for breakfast and serve with a couple of dollops of yoghurt (dairy or coconut), have a healthy snack or as dessert. This great loaf is lower carb too using almond meal and coconut instead of flour so also gluten free. If you want to make it dairy free, use coconut oil instead of butter. 

The loaf also has a huge amount of fiber, vitamins and minerals and healthy fats from the bananas, walnuts, berries and eggs (also high in protein!). An all round stunner! 
You may not need the extra sweetness as the ripe bananas are normally sweet enough but perhaps if you are making it for others, adding a little extra kick from sugar free Natvia, or a natural refined sugar free option would be honey or rice syrup. 
If you want to add and extra crunch, you can add 1/2 cup cacao nibs or, for extra fiber, add 2 Table chia seeds or ground flaxseed.

Pre heat the oven to 200 degrees. Line a loaf dish with baking paper.

In a food processor or you can use an electric beater and mixing bowl, blend the bananas, eggs, softened butter until a batter forms. 

Blend in the cinnamon, baking soda/ powder, sweetener, coconut, almond meal and blend well for 20-30seconds. 

Stir in berries and walnut pieces (don't blitz) 

Pour batter into lined loaf dish and decorate top with walnuts

Place in oven, turn down heat to 180 degrees and bake for 35-40mins. Until just golden on top and when insert a knife, comes out clean. 

Let cool before slicing.
